‘Flower of Salt’…The Queen of all salts.
Regarded as such by many experts, Fleur de Sel (‘Flor de Sal’, as it is known in Spanish) is produced by means of a controlled evaporation process, without any industrial processing. These fine crystals are formed on the surface of the water, at dawn, during the dew, and are manually harvested, using age-old traditional techniques. They then remain in sacks for one year, in order for the sun and wind to finish drying them.
This salt has a delicate sea smell and a very special flavour, and it doesn't lose its properties or stick together as time goes by.
It is always used raw, adding it to any dish just before serving.
